Now it’s Philippe that runs the show, keeping the country store ambiance and friendly prices, while chef Vincent, who’s been coming here since he was a child, elevates grandma’s cuisine to something wonderful. My favorites include the camembert surprise, the tartiflette, and the Pasta Gregoire (tell him you want to watch the preparation – it’s flamed in a giant hollowed out wheel of Parmesan in the middle of the restaurant). From Cagnes Sur Mer train station, take the bus 400 to St Paul de Vence. All in all it takes about 1h from Nice.
