It feels like Ballarat is changing by the day....with new places opening and more and more creative souls moving to this stunning city.
Book early, it's a tiny degustation-only, and pronounced something like oondabar. I still haven't been:( but I have heard it's nothing short of spectacular.

New and gorgeous decor, part of the newly opened Provincial Hotel, opposite the train station in one of Ballarat's many grand old buildings.
