I'll teach you how to cook a Vegan Sushi course including Japanese sweets using organic and small-batch, natural farmed ingredients.
The brown rice we'll use is naturally farmed in my hometown, Ishikawa.
I'll demonstrate that vegan dishes can be healthy, flavorful and filling. I'll introduce you to my favorite Japanese vegan artisanal ingredients like shouyu and mirin.
We'll talk about the traditional Japanese farmers and the importance of protecting their methods.
After cooking, we'll eat the course and you can take the printed recipe with you.

Très bonne expérience pour ma part, j’étais venu en espérant trouver une alternative aux sushis classiques étant donné que j’ai fait vœu de ne plus en manger ailleurs qu’au Japon. Le cours a donc été très enrichissant n’étant pas vegan moi-même, j’ai pu découvrir tout une nouvelle palette de goûts. Aiko demande une participation active, ce qui permet d’enregistrer bien plus facilement les recettes. Ça donne envie d’explorer !

I joined this experience with my mom to learn vegan sushi and cook for my home party. As there is little or no local vegan option in Kanazawa, this is a must-go experience if you are vegan. It was an unique and interesting cooking experience although we cook Japanese food almost every day at home. Aiko san has her own cooking studio in a convenient location and it has a very cosy ambiance in contrast to the hustle and bustle of the nearby Oumi Market. Her selection of seasonings is a top-notch. I especially liked soy sauce, an indispensable condiment to enjoy sushi. Her vegan sushi recipes are simple and creative. The sushi we had was delicious even to my mom who is more foodie than me. My mom claimed one of the best memories from our family trip to Kanazawa. It was truly a fun time for both of us. Thank you, Aiko sensei!

We spent an enjoyable couple of hours firstly making and then eating delicious vegan sushi with Aiko. Her instructions were simple to follow and everything ended up looking fabulous. My Mexican partner enjoyed hearing of Aiko’s time in Mexico also.

We really enjoyed learning how to make vegan sushi and Aiko was an excellent host! The meal we made was delicious and we were able to learn about new ingredients and participate in the process. This was such a unique experience and we would highly recommend it to others.

This course totally exceeded my expectations & we created top quality and beautiful sushi, and learnt about vegan Japanese ingredients from an expert! Aiko was very warm and welcoming, and clearly top in her field & ground-breaking in her stand for environmental and animal issues. A rare gem. Excellent facilities, very clean, wonderful organic and local ingredients. I am a meat eater but was blown away with the delicious sushi we produced, which was also presented with such style and precision. Highly recommended!

We really enjoyed this experience! We made so many different types of sushi and she brought us in to every step of it. From start to finish. We made so much that we couldn’t eat all of it at once, but she packed it in the most incredible custom box that she designed. Was delicious to eat even hours after we made it :)
